# How to Make It:

01 - In a large bowl, combine the cooked chicken, diced avocados, red onion, cherry tomatoes, and cucumber.
02 - Add the chopped cilantro and parsley to the bowl.
03 - In a small bowl, whisk together the lime juice, extra-virgin olive oil, salt, and black pepper until emulsified.
04 - Pour the dressing over the salad and gently toss to combine, being careful not to mash the avocado.
05 - Serve immediately, or chill for up to 1 hour before serving for a colder, firmer texture.

# Additional Tips::

01 -
  • It comes together in the time it takes to listen to three songs, and theres no cooking if you use rotisserie chicken.
  • The avocado replaces mayonnaise, so you get all the creaminess with none of the heaviness.
  • Its one of those rare dishes that tastes just as good after an hour in the fridge as it does fresh.
02 -
  • If your avocado is too firm, it wont mix well, and if its too soft, it will turn the whole salad into guacamole with chicken in it.
  • Dont skip the red onion, even if you think you dont like raw onion, the lime juice tames it completely and adds a sharpness the salad needs.
03 -
  • Use a sharp knife to dice the avocado while its still in the skin, then scoop it out with a spoon so every piece stays intact.
  • If youre cooking the chicken yourself, poach it in salted water with a bay leaf and a few peppercorns, it stays tender and takes on just enough flavor.
