# What You'll Need:

→ Beef & Marinade

01 - 7 oz beef sirloin or flank steak
02 - 1 tbsp olive oil
03 - 1 tsp soy sauce (gluten-free if needed)
04 - Salt and freshly ground black pepper, to taste

→ Vegetables & Greens

05 - 1 medium sweet potato, peeled and diced (7 oz)
06 - 1 tbsp olive oil
07 - 1 ripe avocado, sliced
08 - 2 cups mixed salad greens (spinach, arugula, romaine)
09 - 4 cherry tomatoes, halved
10 - 2 radishes, thinly sliced (optional)

→ Eggs

11 - 2 large eggs

→ Dressing

12 - 1 tbsp Greek yogurt
13 - 1 tbsp lemon juice
14 - 1 tsp Dijon mustard
15 - 1 tsp honey
16 - Salt and pepper, to taste

# How to Make It:

01 - Preheat oven to 400°F. Toss diced sweet potato with 1 tbsp olive oil, salt, and pepper. Spread on a baking sheet and roast for 20 to 25 minutes until golden and tender.
02 - Rub beef with 1 tbsp olive oil, soy sauce, salt, and pepper. Heat a grill pan or skillet over medium-high heat and sear beef for 2 to 3 minutes per side for medium-rare or until desired doneness. Rest and slice thinly.
03 - Bring a small saucepan of water to a gentle simmer. Lower eggs into water and cook for 7 minutes for jammy yolks. Cool under cold running water, peel, and halve.
04 - Whisk together Greek yogurt, lemon juice, Dijon mustard, honey, salt, and pepper in a small bowl until smooth.
05 - Divide salad greens between two bowls. Arrange roasted sweet potato, avocado slices, cherry tomatoes, radishes, sliced beef, and halved eggs evenly. Drizzle dressing on top and serve immediately.

# Additional Tips::

01 -
  • It comes together faster than you'd expect, especially when you've got roasted vegetables and cooked beef ready to go.
  • Every bite feels complete because you've got protein, healthy fats, fresh greens, and something warm all in one bowl.
  • It tastes impressive enough to serve friends but requires zero fancy techniques or finicky timing.
02 -
  • The beef must rest after cooking—skip this and you'll end up with a dry, less flavorful slice, even if it looks perfectly cooked.
  • Slice your avocado fresh right before assembling; cutting it more than a few minutes ahead means it'll start to oxidize and turn an unappetizing brown.
  • A truly jammy egg yolk is what ties this whole bowl together, so don't guess on the cooking time—use a proper timer.
03 -
  • Let your beef come close to room temperature before searing—it cooks more evenly and develops better color without drying out the center.
  • If your avocado isn't quite ripe but you need to use it, slice it carefully and arrange the pieces instead of trying to scoop it, which will just turn it into mush.
