Instructions
- Preheat Oven:
- Preheat oven to 350°F (175°C). Lightly grease a 9-inch (23 cm) round cake pan or line it with parchment paper.
- Mix Dry Ingredients:
- In a medium bowl whisk together flour powdered sugar and salt.
- Cream Wet Ingredients:
- In a large bowl cream the softened butter with almond and vanilla extracts until smooth and fluffy about 2 minutes.
- Combine Dry and Wet:
- Add the dry ingredients to the butter mixture and mix on low speed or by hand until just combined and a soft dough forms.
- Fold In Add-ins:
- Fold in the chopped dried cherries and 2 tablespoons of sliced almonds.
- Press Dough:
- Press the dough evenly into the prepared pan. Smooth the top with a spatula or your fingers.
- Score Wedges:
- Score the dough into 8 wedges do not cut through completely. Sprinkle with remaining sliced almonds and coarse sugar if desired.
- Bake:
- Bake for 22-25 minutes until the edges are just golden and the center is set.
- Cool and Slice:
- Remove from oven. Cool in the pan for 10 minutes then re-score and slice into wedges. Let cool completely before serving.
