# What You'll Need:

→ Meat

01 - 4 boneless veal or pork cutlets, about 4.2 oz (120 g) each, pounded to 1/4 inch thick

→ Breading

02 - 1 cup (4.2 oz / 120 g) all-purpose flour
03 - 2 large eggs
04 - 2 tablespoons milk
05 - 1 1/2 cups (3.2 oz / 90 g) fine dry breadcrumbs, unseasoned
06 - 1 teaspoon salt
07 - 1/2 teaspoon freshly ground black pepper

→ For Air Frying

08 - Olive oil cooking spray

→ To Serve

09 - 1 lemon, cut into wedges
10 - Chopped fresh parsley (optional)

# How to Make It:

01 - Preheat the air fryer to 400°F (200°C) for 5 minutes.
02 - Pat the cutlets dry with paper towels and season both sides evenly with salt and black pepper.
03 - Arrange three shallow bowls with flour in the first, beaten eggs mixed with milk in the second, and breadcrumbs in the third.
04 - Dredge each cutlet in flour, shaking off excess, dip into the egg mixture, then press firmly into breadcrumbs to coat evenly.
05 - Lightly spray both sides of each breaded cutlet with olive oil spray to ensure crispiness.
06 - Place cutlets in a single layer in the air fryer basket; cook in batches if necessary to avoid overcrowding.
07 - Cook for 7 to 8 minutes per side until golden and cooked through, flipping halfway and respraying with oil.
08 - Serve immediately with lemon wedges and a sprinkle of fresh parsley if desired.
