# What You'll Need:

01 - 3.3 lbs Yukon Gold or Russet potatoes, peeled and cut into large chunks
→ Roasted Garlic
02 - 2 whole heads garlic
03 - 2 tsp olive oil

04 - ½ cup heavy cream
05 - 4 tbsp unsalted butter, plus extra for serving
06 - ⅓ cup whole milk, warmed
07 - 2 tbsp sour cream
08 - 1 tsp fine sea salt, plus more to taste
09 - ½ tsp freshly ground black pepper

10 - 3 tbsp fresh chives, finely chopped
# How to Make It:
01 - Preheat oven to 400°F. Slice tops off garlic heads to expose cloves, drizzle with olive oil, wrap in foil, and roast for 40 minutes until tender and golden. Cool slightly and squeeze out softened cloves.
02 - Place potatoes in large pot, cover with cold salted water, bring to boil, reduce to simmer, and cook 15–18 minutes until fork-tender. Drain thoroughly.
03 - Return drained potatoes to pot. Add roasted garlic, butter, and warm cream. Mash until mostly smooth.
04 - Stir in milk, sour cream, salt, and pepper. Continue mashing or use hand mixer for creamier texture. Adjust seasoning as needed.
05 - Fold in most chives, reserving some for garnish. Transfer to serving bowl, top with extra butter, and sprinkle remaining chives. Serve hot.
